Primo’s Café & Deli opening soon on Ridge Road

Primo’s Café & Deli, a café and diner serving Italian food and freshly roasted coffee, is set to open at 2057 Ridge Road in downtown Homewood, the former location of Redbird Cafe.

Scott Donkel owns Primo’s and The Ridgewood, the bar in the adjacent storefront. He and his daughter, Amy Donkel-Rohne, the communication manager at Primo’s, said the two businesses will be synergistic while remaining notably distinct.

“We’re going to have a pretty robust coffee program with an espresso machine. A full espresso menu, breakfast sandwiches, breakfast pizza and breakfast pastries,” Amy said.

Amy said Primo’s will serve soups, salads, pasta, seasonal specials and Italian deli sandwiches, adding that the sandwiches will be on freshly baked bread and have both cold and hot options. They’re also set to have to-go items such as beverages, premade sandwiches and breakfast pizzas.

“We’ve got breakfast pizza, which is a big thing in New York. They don’t really have that here. People are going to love that,” Scott said. “Most of our food is scratch-made. Most of it’s made on premise.”

The coffee beans at Primo’s will be freshly roasted by Counter Culture, a sustainability-focused roaster, less than a week before they’re brewed, Amy said. Primo’s met with Counter Culture and “had multiple cuppings” before figuring out what roasts would be best for a café in downtown Homewood, she said.

“For the people who like the Pike Place and the blonde roast at Starbucks, we’re going to have something similar to that,” Amy said. “To people who really enjoy specialty coffee, and maybe something a little bit more funky or out there in their espresso, we’re going to have those kind of options as well.”

Primo’s also will serve hot and cold lattes, cold brews and house-made syrup, Amy said.

Amy said she expects Primo’s to be a welcoming environment for commuters walking to and from the recently renovated Homewood Metra station across the street and for community members walking around downtown Homewood or meeting a friend for coffee. She said Primo’s will have plenty of seating and places where customers can charge their laptops.

The Ridgewood will utilize the Primo’s kitchen at night, allowing customers to order Primo’s menu items through a window, management said. Primo’s kitchen space will allow The Ridgewood to add additional food to its menu, including but not limited to smash burgers and meatball submarine sandwiches, they said.

“We’re very excited. We’ve done a lot of work over the last six months to get us to this point,” Scott said. “We’ve got beautiful furniture being delivered from Chicago Booth — all custom made. We got all-new kitchen equipment installed.”

Primo’s is set to open in early February, management said.
