Lou Malnati’s Pizzeria this week moved a step closer to opening a restaurant in Flossmoor.

The village’s plan commission Thursday unanimously recommended that an amendment to a special use permit be granted allowing Malnati’s to operate a carryout/delivery-only restaurant at 3315 Vollmer Road in Flossmoor Commons.

The recommendation will go before the Flossmoor Village Board on Aug. 1. If the board approves the special use permit, construction would begin immediately upon issuance of the building permits for the project, said Scott Bugner, the village’s inspectional services administrator.

Bugner said last month that Malnati’s had requested that the building plan reviews be completed in advance of any approval. The submitted plans have been reviewed for code compliance and Malnati’s is currently in the process of bidding the work to various contractors, Bugner said Friday.

Malnati’s, one of the Chicago area’s best-known purveyors of deep dish pizza, plans to completely renovate the space in Flossmoor Commons, the former Flavor restaurant site.

Northbrook-based Lou Malnati’s currently has 45 locations, including 30 for carryout, 13 sit-down restaurants and two cafes. The first Malnati’s pizzeria was opened in 1971. The company is owned by the Malnati family.
